MEDITERRANEAN TUNA SALAD

INGREDIENTS:

  • 8 oz. Reser’s® Tuna Salad
  • 1 cup white northern or cannellini beans, drained and rinsed
  • 1 cup artichoke hearts, drained and quartered
  • 6 oz. baby arugula or other leafy greens
  • 12 oz. okra
  • 1/2 cup sun-dried tomatoes
  • Juice and zest of 1 lemon

DIRECTIONS:

  1. Mix the beans, artichoke hearts, sun-dried tomatoes, and lemon juice into the tuna salad in a mixing bowl.
  2. Scoop salad onto a bed of baby arugula and garnish with lemon zest.
  3. Serve with crusty bread.
