1 (14 oz) Package of Reser’s Baked Macaroni & Cheese
1/2 cup Reser’s Baja Cafe Fire Roasted Salsa
1/4 cup Mrs. Kinsers Pimento Cheese Spread with Pepper Jack (or 1/2 cup grated pepper jack cheese)
1/4 cup chopped Green Bell Pepper
1/4 cup chopped Red Bell Pepper
2 Tbsp chopped White Onion
2 corn tortillas-cut into thin strips (matchstick) for garnish
1 Tbsp chopped fresh Cilantro for garnish
1 Tbsp veg or canola oil
3 Tbsp veg or canola oil for frying tortilla strips
Preheat oven to 400 ºF.
Heat Mac & Cheese up slightly on stovetop with pepper jack and salsa to melt and combine cheese.
Heat 1 tbsp. of oil in a small sauté pan on medium heat and cook peppers and onions until softened.
In an oven safe dish or ramekins, combine Mac & Cheese, peppers and onions, salsa and pepper jack cheese. Place in oven.
While Mac & Cheese is in the oven, heat 3 T of oil in a medium sauté pan to medium heat. Pan fry the tortilla strips until golden brown. Remove and place on a paper towel and season with salt and pepper or even a dash of chili powder.
Once Mac is bubbling and getting some caramelization on top. Remove, serve and garnish with tortilla strips and cilantro.
