Mediterranean Tuna Salad
- 8 oz Reser’s® Tuna Salad (71117.11405)
- 1 cup white northern or cannellini beans, drained and rinsed
- 1 cup artichoke hearts, drained and quartered
- 6 oz baby arugula or other leafy greens
- 12 oz okra
- 1/2 cup sun-dried tomatoes
- Juice and zest of 1 lemon
- Mix the beans, artichoke hearts, sun-dried tomatoes, and lemon juice into the Reser’s Tuna Salad in a mixing bowl.
- Scoop salad onto a bed of baby arugula and garnish with lemon zest.
- Serve with crusty bread.
